Product Description

A wonderful expression of the labor intensive old-world style tirage, this Pinot Noir based Blanc de Noir is crafted on grapes sourced from the Yakima Valley of Washington State, harvested early to preserve a vibrant acidity.

Tasting Notes

Fresh and vibrant “Champagne style” wine exuding bright fruit aromatics of fresh picked raspberries, muddled strawberries and touch of creamy vanilla flavors. On the palate this wine continues its campaign of youthful fruit character with more first of harvest strawberries and raspberries fruit expression with a slight creamy softness in the mid-palate complimenting the supple fruit notes.

AVA:

Yakima Valley, WA

Oaking/Aging Notes:

7 months tirage (bottle fermentation to create the “bubbliness” in this sparkling wine of Pinot Noir)

Recommended Food Pairings:

Ceviche or Fresh Shucked East Coast Oysters

Special Notes About Blanc de Noir Region/Varietal:

Wine grapes were sourced from the western side of Yakima Valley, WA closer into the foothills of the Cascade Mountains at optimal maturity, which helps retain a bright acidity keeping this sparkling wine on the vibrant and fresh side of sparkling wine.

This Blanc de Noir “white of black” is a white wine produced of 100% Pinot Noir which is a red grape variety. It is called “Blanc de Noir” as the skins are removed from the processing Pinot Noir immediately after delicate pressing to limit the amount of pigment present in the final product. Conversely, a Blanc de Blanc is a white wine produced of white grape varieties. This Pinot Noir based sparkling wine is processed in the “Champagne style” which is the traditional method “Méthode Champenoise'' this results in a finer, more silkier texture to the mouthfeel.
