Winemaker's Notes: Everyone needs more bubbly and the winemaking and Cellar Beast is no exception. Our Blanc de Noir is our baseline "Champagne style" wine, it is 100% Pinot Noir from the western side of Yakima Valley. We made this bubbly to be the fresh, zesty and refreshing side of the bubbly world. This wine is versatile in nature, pairing with a wide range of food or treated a single serving on a gorgeous day sitting on your porch.

Wine grapes were sourced from the western side of Yakima Valley, WA closer into the foothills of the Cascade Mountains at optimal maturity, which helps retain a bright acidity keeping this sparkling wine on the vibrant and fresh side of sparkling wine.
This Blanc de Noir “white of black” is a white wine produced of 100% Pinot Noir which is a red grape variety. It is called “Blanc de Noir” as the skins are removed from the processing Pinot Noir immediately after delicate pressing to limit the amount of pigment present in the final product. Conversely, a Blanc de Blanc is a white wine produced of white grape varieties. This Pinot Noir based sparkling wine is processed in the “Champagne style” which is the traditional method “Méthode Champenoise'' this results in a finer, more silkier texture to the mouthfeel.
