We harvest this fruit with the specific intention of the production of this Cabernet Franc Rosé, which means we harvest the fruit earlier to keep the acidity higher to complete the freshness and vibrance of this wine. After harvest this wine is pressed immediately so as to ensure minimal pigmentation extraction thus leaving this wine lighter in color and overall expression during tasting & consumption.
