Winemaker's Notes: Blending big red wines is one of our specialties here at Cellar Beast. Our winemaking team works tirelessly to ensure the perfect blend is achieved especially when utilizing our highest quality fruit from the Red Mountain AVA. Left bank Bordeaux style blending allows our team to fully take advantage of the prowess of each variety selected for the blending, again allowing our team to sculpt a truly unique and expressive wine that is built for now and retains the ability to age for 5+ years.

Cabernet Sauvignon has different character from each AVA, sub AVA, and vineyard we work with. We fell in love with the Cabernet from Red Mountain back in 2020 and have enjoyed have vineyard specific offerings. The Midnight Archer is always using Cabernet from Quintessence Vineyard which can go as high as 1,106ft elevation and has a diverse loam soil which like in Napa’s Cabs helps to add a richness and density to the Cabernet Sauvignon. The supporting grapes add to the mouthfeel and just that small percent of Carménère brings a light pepper note on the nose. Our expression of this Bordeaux style blend is meant to evoke the feeling that you are in a small village in Bordeaux tasting the true old world.
